Here is the free and easy recipe for those who love Japanese style salad – Pumpkin with almond salad. Mayonnaise , fresh cream and sugar play the main role here. Just prepare more to keep in the freeze. The next day, you will get the tasty mixture of 3 ingredients mixed into the pumpkin. Try this out, and let me know if you like the cool Yummy taste then!

Almond Pumpkin (kabocha) salad

Ingredient : ( 4 servings):
- Â 250g pumpkin squash
-Â Â Â 3 tbsp mayonnaise
-Â Â Â 2 tablespoons fresh cream
-Â Â Â 1/2 teaspoon sugar

Preparations:
Peel the hard skin from the pumpkin, cut it into large bite-size pieces. Boil the pumpkin pieces with hot water until tender. Drain and allow to cool. Combine mayonnaise, fresh cream and sugar in bowl then add the pumpkin & toss well. Transfer the pumpkin to the serving plate and sprinkle with some almond slices if you preferred.

As for me, I like to prepare more to keep in the freeze and take the next day. The mixture of mayonnaise and creame into pumpkin squash is somehow… “Yummy” as the time goes..

Here is a special salad that I want to share – “Traffic Light Salad”. Looking at the name, isn’t it special? I get this cool idea when I saw 3 capsicums were arranged nicely by Green, Yellow, and Red in a vegetable stall yesterday. I can’t wait to take photo, and start to get some ingredients to make salad. To be more precise, I would called this salad as Shrimps Eggs Capsicums Salad.
For the basic japanese salad dressing, you can add 2 tbs rice wine vinegar, 1 tbs soy sauce, 1/2 tsp sugar and mix it well. Add in 6 tbs vegetable oil at last stage to prepare for serve. As for me, I would prefer to buy various flavor dressings such as japanese flavor(Wahu), Chinese flavor(CyuKa), Sesame flavor(Goma) etc.

Ingredients:

2 eggs hard boiled and sliced

100g shrimps

1 carrot cut into strips

1 japanese cucumber cut into strips

capsicum ( green, yellow, red; 1 each), cut into strips

nori seaweed

Japanese salad dressing

Preparation:

Put water in a pan and bring to boil. Boil eggs for 15 minutes until cooked, then peel it. Add in shrimps to boiling water until cooked. Quickly transfer shrimps into a bowl filled with cold water. Add in the vegetables into a large bowl, topping with eggs and nori seaweed. Prepare to serve with japanese salad dressing.

1 table spoon canola oil
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 medium cucumber
1 curly leaf lettuce

Make the dressing: Stir together the yogurt, dill, vinegar, salt and pepper. Refrigerate. Make the salad: Sprinkle salmon on both sides with oil, salt and pepper. Heat grill until it very hot. Place salmon on the grill and cook, covered, until flaky, about 3 minutes on each side. Transfer to a serving plate and allow to rest for at least 5 minutes. Carve into 1/2 inch slices. Place salmon in a bowl and toss with the dressing. Cover and refrigerate. Just before serving, peel cucumber and cut in half lengthwise. Using a small spoon, scrape down the center to remove seeds. Thinly slice. Mound salmon mixture in center of a large platter lined with lettuce leaves. Surround with cucumber, tomatoes, onions, and lemon slices. Garnish with additional dill if desired.
