<p>Ingredients:(4 serving)</p>
<p>1 block silk Tofu cut into 2cm bit size<br />
350g chicken breast cut into bite size<br />
80ml water<br />
1/2 tbsp vegetable oil<br />
4 dried shiitake mushroom<br />
chopped green onions</p>
<p>(For sauce)<br />
6 tbsps miso<br />
3 tbsps japanese sake<br />
3 tbsps sugar<br />
2 tbsps oyster sauce<br />
1 tbsp cornstarch</p>
<p>Preparations:<br />
Soak the dried shiitake mushroom and cut into slices. Heat vegetable oil in a pan. Add in the chicken and cook about 3 minutes with medium heat. Pour in ingredients for sauce. Add in tofu stir slowly with low heat. Transfer to bowl and garnish with green onions for serve.</p>

<p>Ingredients: (4 serving)</p>
<p>1 medium sized daikon radish<br />
600g chicken wings<br />
4 dried shiitake mushrooms<br />
4 shiso leaves<br />
4 tbsp soy sauce<br />
1 1/2 tbsp sugar<br />
1 1/2 tbsp oyster sauce<br />
2 tsp salt<br />
2 tbsp japanese sake<br />
soaking water from shiitake</p>
<p>Preparations:<br />

Peel and cut daikon intoÂ  semi-circles slice about 3 centimeters thick. Soak the dried shiitake mushrooms in water to hydrated them. When hydrated, cut away the stems and cut the mushroom into half. Add shiitake soaking water in a pan together with chicken, daikon and shiitake mushroom. Put more water to cover them and bring to boil. Skim off the foam from the surface. Pour in soy sauce, sugar, oyster sauce, salt , Japanese sake and simmer for 30 ~ 40 minutes over medium low heat. Transfer to the serving bowls, garnish with shiso leaves.</p>

<p>  Cut the mackerel into half. Mix water, sake, sugar ,ginger slices and miso in a pan and heat to boil. Add mackerel and simmer it for 10 minutes on low heat. Slowly stir and pour the sauce over the mackerel. Add in spring onion and stir well. Stop the heat and ready to serve.</p>
